Easy to prepare using simple methods that best enhance the lamb's succulent natural flavor:
Thaw leg of lamb in refrigerator for two to three days before preparing.
Remove leg from packaging and place on a rack in an open, shallow pan, fat side up. Season or dry rub as desired.
Roast in 325°F oven until the meat thermometer registers 145°F for medium rare (about 1 ½ to 2 hours) or 160°F for medium (about 2 to 2 ½ hours). To make slicing easier, let lamb stand for 5 to 15 minutes before slicing. Alternately, grill on low heat until the desired internal temperature.
